Pesticide residue free Fruit, Salad and Potatoes

New Potato and Bacon Salad

Ingredients

Serves 4

  • 500g Good Natured Bonnie Baby Potatoes
  • 1 ½ tbsp mayonnaise
  • 1 tsp horseradish sauce
  • 2 spring onions, trimmed and sliced
  • 2 tbsp freshly chopped flat leaf parsley
  • Seasoning
  • 4 rashers streaky bacon

Method

  1. Cook the potatoes in simmering water until tender.  Drain.
  2. In a large bowl, mix together the mayonnaise and horseradish.
  3. Add the remaining ingredients, along with the potatoes and toss gently.
  4. Grill the bacon until well cooked and crisp.  Roughly chop and sprinkle over the potato salad.
