- 500g Good Natured Bonnie Baby Potatoes
- 1 ½ tbsp mayonnaise
- 1 tsp horseradish sauce
- 2 spring onions, trimmed and sliced
- 2 tbsp freshly chopped flat leaf parsley
- 4 rashers streaky bacon
- Cook the potatoes in simmering water until tender. Drain.
- In a large bowl, mix together the mayonnaise and horseradish.
- Add the remaining ingredients, along with the potatoes and toss gently.
- Grill the bacon until well cooked and crisp. Roughly chop and sprinkle over the potato salad.
